Best Fudgy Brownies


I love chocolate! I like it in any pretty much any form but especially the really dark, rich stuff. For me, when I want dessert, I want chocolate and that often means rich, fudgy brownies. I have always loved brownies and used to make them all the time as a teenager. I don't make them as often anymore, I eat a lot healthier than I used to, but I still enjoy them from time to time. When I was younger, I would mostly use a box mix but once I developed this recipe I could never go back. These brownies are rich, fudgy, and super chocolaty just the way they should be!






 I know brownies don't really fit into my usually low-carb, high-veggie, healthy diet, but it's okay to splurge, every once in awhile, and indulge in something incredibly delicious like these! Remember not to beat yourself up for eating what you want, just try to balance it out by eating healthy regularly and staying active. That way you can afford a few extra calories when you want. 




I also made the switch to only using Whole Wheat flour for all of my cooking and baking a few years ago. Whole wheat flour is high in fiber and minerals and is much more nutritious than regular all-purpose flour but can have a grittier texture, to avoid that texture issue I use a local Organic Stone Ground Whole Wheat Pastry Flour that is ground to a finer texture than most whole wheat flours. Anyways, enough about health, back to the good stuff!

Best Fudgy Brownies


Serves: 20 


Ingredients: 


1 cup Butter, softened
3 cups White Sugar
1 Tbsp Vanilla Extract
4 Eggs
1 1/2 cups Flour
1 cup Cocoa
1 tsp Salt
1 cup Semi-sweet Chocolate Chips



Directions:

Preheat your oven to 350 degrees F.

Start by creaming together the butter, sugar and vanilla. Don't worry if the mix is dry, it will come together when we add the eggs. 

Now, add the eggs in one at a time, mixing until just blended before adding the next one. 

In a separate bowl, mix or sift together the flour, cocoa, and salt. 

Then, add the dry ingredients and chocolate chips to the wet ingredients and stir to combine. 

Pour into a greased 9x13 baking dish and bake for 35 minutes. 

Let brownies cool before cutting into them, it also helps to use a plastic knife. Enjoy!
