I love chocolate! I like it in any pretty much any form but I especially love the really dark, rich stuff. For me, when I want dessert I want chocolate and that often means rich, fudgy brownies. I have always loved brownies and used to make them all the time as a teenager. I don’t make them as often anymore, I eat a lot healthier than I used to, but I still enjoy them from time to time. When I was younger, I would mostly use a box mix but once I developed this recipe I could never go back. These brownies are rich, fudgy, and super chocolaty just the way they should be!

I know brownies don’t really fit into my usually low-carb, high-veggie, healthy diet, but it’s okay to splurge every once in awhile. I like to indulge in something incredibly delicious like this, or these Perfect Chocolate Chip Cookies, when I’m craving something sweet! Remember not to beat yourself up for eating what you want, just try to balance it out by eating healthy regularly and staying active. That way you can afford a few extra calories when you want. These brownies would be great at the end of race day, or after a long hike.

I made the switch to using only whole wheat flour for all of my cooking and baking a few years ago, which is healthier than the bleached stuff. Whole wheat flour is high in fiber and minerals making it much more nutritious than regular all-purpose flour but can have a grittier texture. To avoid that texture issue I use Bob’s Red Mill Organic Whole Wheat Pastry Flour which is ground to a finer texture than most whole wheat flours. Anyways, enough about health, back to the good stuff!

Instructions
  1. Preheat oven to 350 degrees F. Cream together butter, sugar, and vanilla in a large mixing bowl.
  2. Add eggs one at a time, mixing until just blended before adding the next egg.
  3. In a separate bowl, mix or sift together flour, cocoa, and salt.
  4. Add flour/cocoa mixture and chocolate chips to wet ingredients and stir to combine.
  5. Lightly grease a 9x13 baking dish and fill evenly with brownie batter. Bake for 35-40 minutes.
  6. Let brownies cool before cutting into them. Also, if you use a plastic knife it will be easier to cut. Enjoy with a tall glass of cold milk or top with vanilla ice cream for a real treat!

Best Fudgy Brownies

Serves: 20

 

Ingredients:

1 cup Butter, softened
3 cups White Sugar
1 Tbsp Vanilla Extract
4 Eggs
The wet ingredients for these fudgy brownies starts with lots of butter and sugar, and four eggs.1 1/2 cups Flour
1 cup Cocoa
1 tsp Salt
1 cup Semi-sweet Chocolate Chips

Directions:

Mix eggs into the ingredients one at a time.Preheat your oven to 350 degrees F.
Start by creaming together the butter, sugar and vanilla. Don’t worry if the mix is dry, it will come together when we add the eggs.
Now, add the eggs in one at a time, mixing until just blended before adding the next one.
In a separate bowl, mix or sift together the flour, cocoa, and salt.
Mix the flour, cocoa, and other dry ingredients in a separate bowl before adding to the wet. Then, add the dry ingredients and chocolate chips to the wet ingredients and stir to combine.
Pour into a greased 9×13 baking dish and bake for 35 minutes.

Let brownies cool before cutting into them, it also helps to use a plastic knife. Enjoy!
