German Cabbage and Onions


Today I have another great vegetable side dish for you! We love vegetables here, as you all probably know, and I love to encourage people to eat more vegetables by providing ideas and recipes to prepare them. We have a constant stream of fresh produce coming in thanks to Full Circle (If you are interested check out this post for more info) so we are always cooking up new vegetable side dishes.






This one has become one of our personal favorites and goes really well with a nice thick piece of meat like steak or pork chops. I served this batch with a steak that I froze 2 months ago back from this post and cooked up from frozen using the method I describe there. It was tender, juicy and perfect to go with a big heaping portion of cabbage and onion.






This dish is simple, delicious and healthy. Cabbage is a good source of Thiamin, Calcium, Iron, Magnesium, Phosphorus and Potassium, and a very good source of Dietary Fiber, Vitamin C, Vitamin K, Vitamin B6, Folate and Manganese and onions are also a good source of Dietary Fiber, Vitamin B6, Folate, Potassium and Manganese, and a very good source of Vitamin C. Just add a little bit of flavoring and cook them down together and you have a delicious and nutritious side dish!




German Cabbage and Onions


Serves: 4




Ingredients

1 Cabbage, sliced
1 Onion, sliced
3 Tbsp Butter
1 Tbsp Brown or Whole Grain Mustard
1/2 Tbsp Horseradish Sauce
1/2 tsp Sea Salt
Freshly Cracked Black Pepper, to taste


Directions


Heat butter, on medium heat, in the bottom of a deep pan or pot. Once the butter is melted and starting to brown add cabbage, onion and seasonings and stir to combine. Cook for 5 minutes, stirring frequently, then cover and turn heat down to medium-low and cook until cabbage and onions are soft, about 20-30 minutes, stirring every 5 minutes or so.
