Grilling Vegetables

I love to grill. It’s probably my favorite way to cook and that’s most likely because I get to be outside and cook at the same time. I also love nature and right now I happen to have a pretty great backyard to grill in, complete with a nice grill and a big round picnic table with plenty of seating for us and lots of friends. It’s no wonder I use the grill every chance I get!

 

 

I grill everything. It doesn’t always work out perfectly but I’ve tried just about everything and it’s always fun and usually delicious. I can often make a whole dinner out there too, including the amazing grilled vegetable recipes that I’m going to share with you today. You can cook all kinds of meats, vegetables, and even fruits on the grill and it adds a wonderful smokey flavor. For this post, I grilled corn on the cob, asparagus, and zucchini and it was all delicious.

Some of my other favorite things to grill are peppers, onions and potatoes. You can use skewers or baskets to hold smaller items that would otherwise fall through as well! So there is a way to grill pretty much anything and you get the added bonus of enjoying the outdoors as you cook. Grilling Vegetables


Balsamic Glazed Zucchini

Serves: 2

Ingredients:

2 Zucchini
1 Tbsp Extra Virgin Olive Oil
1 Tbsp Balsamic Vinegar
Sea Salt
Freshly Cracked Black Pepper

Directions:

Preheat your grill to about 400 degrees F.
Cut the top and bottom off of your zucchini and then cut them into 1/4’s lengthwise so they form long spears. Place them in a pan or baking dish and drizzle with olive oil and balsamic vinegar. Toss them to evenly coat, then sprinkle with salt and pepper. Grill for 5-10 minutes per side turning once each side has nice grill marks. Keep an eye on your veggies as cooking times can vary greatly depending on your specific grill and some areas may be hotter than others.


Honey-Lemon Asparagus

Serves: 4

Ingredients:

1 bunch Asparagus
1 Lemon
3 Tbsp Honey
1 Tbsp Extra Virgin Olive Oil
Sea Salt
Freshly Cracked Black Pepper

Directions:

Preheat your grill to about 400 degrees F.
Wash and trim your asparagus. Place in a pan or baking dish, Drizzle with honey and olive oil. Cut the lemon in half and squeeze the juice of one half over the asparagus, then sprinkle with salt and pepper. Toss to evenly combine. Grill for 10-15 minutes turning regularly to prevent burning. Once evenly cooked remove from the grill and juice the remaining lemon half over your asparagus and serve.

Corn on the Cob

Ingredients:

Corn on the Cob
Butter

Directions:

Preheat grill to about 400 degrees F
Remove husk from corn and place directly on grill. Rotate every 5-10 minutes to get an nice even grill on all sides. I rub some butter on mine once they look like the picture above and that’s it. Delicious and easy. Enjoy!
