These easy pesto meatballs sandwiches are great for lunch on the weekend or even a quick dinner.

While I am a huge fan of making my food from scratch, sometimes I like the convenience of using some pre-made items to whip up something delicious quickly and easily. These Pesto Meatball Sub sandwiches are exactly that. They are easy and delicious and take less than thirty minutes total to make.

But, just because you used some store bought ingredients, that doesn’t mean it can’t be fresh and healthy. I add this homemade pesto sauce full of parsley and basil and packed with fresh flavor. This really brightens the dish and balances it out nicely.

The best part is that even the pesto sauce is quick and easy. You just add your ingredients to a blender and let it do all the work for you. This really keeps the prep time to a minimum. You do need to toast your garlic bread for a few minutes as well but if you buy your bread from the grocery, like we did here, it is already spread with butter, garlic, and seasonings. If not, you can buy a whole loaf of French bread and cut it and season it yourself quickly.

Otherwise, you just heat up some meatballs, whether store bought or homemade, and melt your provolone onto the top of the bread. Then throw a layer of pesto both above and below your meatballs, form your giant pesto meatball sub, and cut into into pieces to share and enjoy!

Instructions
  1. Toast your garlic bread in the oven or broiler until just starting to brown. Place provolone slices evenly across the top half of the bread and toast for a couple more minutes until cheese is melted.
  2. While the bread is toasting. Add all of the pesto sauce ingredients to a blender and blend until smooth.
  3. Heat meatballs until they are fully cooked to an internal temperature of at least 165 degrees F.
  4. Spread a thick layer of pesto sauce on the bottom half of the bread. Then add the meatballs and another layer of pesto sauce over them.
  5. Form your whole sandwich and cut into quarters for serving.
