Easy Prep-Ahead Breakfasts

Breakfast has always been a struggle for me. I rarely feel hungry in the morning and I pretty much never feel like cooking, so I often just skip it. But the more I work on my health and wellness the more I realize that I need to eat breakfast, that it really is the most important meal of the day. Breakfast gives you the energy you need to succeed throughout your day, if you eat the right things, and can make or break your day. So that’s why I love breakfasts that I can prepare ahead of time, that way they are ready for me in the morning.

There are a ton of different options for prep-ahead breakfasts so I’m just going to share my favorites with you today. Some are meant to be served hot and will just need to be heated up in the morning and others will just be ready to eat when you get up! As always, remember to Chef Around and make these recipes your own, don’t be afraid to change things up and use ingredients you like! Also, if you don’t have one of these, these Pyrex dishes can be used for baking and storing and they last forever, I recommend checking them out. They are one of the items I use the most in my kitchen.


Prep-Ahead Breakfasts

#1 Chile Relleno Breakfast Casserole

This is my all-time favorite prep-ahead breakfast. Chile relleno casserole is full of protein and is absolutely delicious. One casserole can be split into several meals and just needs to be heated up briefly in the morning. This is also one of my favorite brunch dishes.

#2 Egg Muffins

Egg muffins are a delicious, nutritious and healthy prep-ahead breakfast. You can make them with whatever fillings or ingredients you want. I like to make a couple different kinds of muffins when I make them. That way you have options and aren’t eating the exact same thing every morning. This recipe calls for turkey sausage but don’t be afraid to make vegetarian egg muffins as well! #3 Overnight Oats

Overnight oats are a really easy and quick prep-ahead breakfast. There are a million varieties of this dish and it can be made with whatever ingredients you like. This is a great vegan/vegetarian option that doesn’t even need to be heated in the morning. Just pull it out of the fridge and enjoy! #4 Breakfast Taquitos

I love anything Mexican inspired and these breakfast taquitos are awesome! This is a healthier baked version of a classic made with breakfast ingredients to give it a twist. The addition of spinach adds some rare, for breakfast, and much needed greens to this dish and the sausage, egg, and cheese give it that classic breakfast flavor. These can be made ahead in batches and quickly reheated in the morning.
