I know I have talked a bit about the weekly produce delivery service that Heather and I use in the past, because it’s amazing and I love it. The service we use is called Full Circle. They provide us with an assortment of fresh, organic produce every week that ends up meeting most of our produce needs. I only buy maybe one or two produce items at the grocery store per week now. The cost of Full Circle’s subscription service is much cheaper than if I were to buy the same amount of organic produce at the store, plus it gets delivered right to my door!
The quality and freshness of their fruits and vegetables is excellent and we are constantly amazed by how delicious it all is. We typically get a good mix including some fruit, some root vegetables, some greens, and other great vegetables. It’s anywhere from 6-10 different items and you get a good amount of each, proportionate to the box size that you order. Heather and I get the smallest size and it’s perfect for a couple. They also have an online store where you can add all sorts of delicious organic food to your order.

Neither Heather or I really love salads, so we didn’t eat them very often until we started using Full Circle. But we kept receiving all these delicious looking greens, multiple varieties of kale, romaine, red and green leaf lettuce, spinach, arugula, and more! We just had to use them, so we started making salads with the greens and whatever other fruit and produce we had around, which we always have in abundance now. Now we really enjoy these salads, especially when we have beets to roast and add to them! I also usually add hard-boiled eggs and/or nuts because they are great on salads and full of protein. We hard-boil our eggs during our weekly meal prep on the weekend so that we have them ready and available all throughout the week.
I also started making salad dressings from scratch to go with these salads, in a similar manner, using what ingredients I have on hand. So I will include a recipe for homemade salad dressing in this post and there will be more to come! As always, feel free to Chef Around and make salads and dressings that you like!
