Cilantro Lime Rice
Rice is one of the most common and important foods in the world. Without it we would struggle even more to feed our growing population. It is a mainstay in diets from Asia to the Americas and there are a thousand different ways to prepare it. This is my absolute favorite. This cilantro lime rice is a twist on a traditional Mexican style rice that I have been eating my whole life. But to tell you the truth, I didn’t really like or eat any other rice for much of my life. There was always something special for me about the rice I would find in Mexican restaurants and homes. It’s just perfect for soaking up delicious and savory sauces.
About ten years ago, I had the privilege of learning how to make the traditional style of Mexican rice at home from a family friend. She didn’t even have a recipe written down. She had learned it the old school way. By word of mouth, passed down through the generations. I wrote it down and kept it with me for years until I had it memorized. It was one of my prized possessions. I have based several of my rice recipes on it, like this one that is designed for a rice cooker, and the technique and flavor is the basis for this cilantro lime rice.
The Brown Rice Dilemna
A few years ago, I ran into some difficulty when I was trying to change my diet and eat healthier. I made the switch to eating whole grains and struggled to recreate the same amazing flavor and texture with brown rice. For years I have been trying to come up with a new recipe using brown rice that is just as delicious. After moving to Costa Rica, I finally nailed it. I was inspired by the great local produce to try again using fresh ingredients and the amazing limes from our tree. This recipe is absolutely amazing! It even got local approval! So I’m sure you will love it as much as we do.
