Cilantro Lime Rice
This Mexican style rice is so good that I end up making it almost every week! The addition of cilantro and lime really brightens and freshens the flavor and makes it the perfect rice to serve with Mexican or other Latin food.

  1. Start by prepping your onion, bell pepper, and garlic. Heat olive oil in a large pot over medium heat.
  2. Add rice and onion and cook, stirring frequently, until rice is evenly toasted. About 5-7 minutes.
  3. Add bell pepper and garlic and cook for 1 minute. Then add spices and cook for 30 seconds, stirring constantly, to evenly season rice.
  4. Add chicken stock and bring to a boil. Cover and turn heat down to low to simmer for 40 minutes. Turn off heat and let sit for another 5 minutes. Then fluff with a fork.
  5. Let rice cool slightly and then mix in chopped cilantro and lime juice. Enjoy!
