Curried Cauliflower and Potatoes
These curried cauliflower and potatoes are insanely delicious. We don’t eat a lot of Indian food, especially since moving to Costa Rica, but we do love the flavors. This recipe is quick, easy, filling, and delicious. And it’s quickly becoming one of our favorite vegan dinners. This dish is loaded with bright flavor and is so good that we always want more, even when we’re stuffed.
As you probably know, we’ve been working on eating less animal products for awhile now. This dish was actually recommended by a friend as a good vegetarian or vegan recipe. It’s from a cookbook of traditional Indian vegetarian dishes and is often served as a meal along with naan, dal, and salad. We ate it all by itself but I’m sure it would be amazing with some good naan. But it would make a great vegetable side dish as well.
Spices of India
When I first saw the recipe, I realized that all of the ingredients are common here in Costa Rica even though the combination is not. We also grow our own turmeric and love finding new ways to use it to enjoy it’s amazing anti-inflammatory properties. The one thing that we couldn’t find was garam masala. Garam masala is a spice blend used in a lot of Indian and Middle-Eastern recipes. It’s made with spices like black pepper, cardamom, coriander, cinnamon, and nutmeg. So, I just made my own! I followed the recipe here but I used fresh whole organic spices that I ground and combined myself and it’s incredible. It’s so good I even used it to season some baked sweet potato fries and they were amazing!
