1Jalapeno(optional for extra spice, leave this out unless you like spicy food)
Preheat your oven to high broil. Wash the red peppers, onion, and jalapeno. Cut the ends off the onion and cut it in half.
Space the peppers and onion evenly on a baking sheet and place on the top rack in the oven. Broil for 5 minutes then flip the peppers over and broil for another 5 minutes. They should be bubbly and charred in some places.
Let the peppers cool and then remove the stems, seeds, and skin.
Add the roasted peppers, onion, garlic, lime juice, salt and pepper to a food processor or blender and blend to a smooth consistency.
