Spicy Shredded Chicken Sandwiches

I have been making big batches of this spicy shredded chicken almost weekly since we moved to Costa Rica. It’s fairly easy to make, packed with flavor and can be used in a number of ways. This recipe came about when we had some of that leftover chicken. At the time, we threw it on a baguette with some cheese, and had a quick, delicious lunch. But the idea had been hatched. “This could really go somewhere,” we thought. After a little bit of discussion and experimentation, we came up with this spicy shredded chicken sandwich. It’s delicious.

This recipe is great because it is so versatile. The chicken can easily be made in a slow-cooker ahead of time or before work, and then it’s super quick to throw together a sandwich. We also include a quick and easy coleslaw recipe that perfectly balances the spice of the chicken and adds great texture. This takes just a couple minutes to make, can also be made ahead, and is totally worth it. Cabbage and carrots are both highly nutritious and this coleslaw is amazing with the spicy chicken. This recipe can also be made much more quickly in the oven if you forget to put it in the slow-cooker or don’t have time. We have included directions for both methods of cooking.

Speaking of versatile, this can be made as a bowl with rice or beans and is amazing that way as well. The chicken is great in pretty much anything. It can be made into tacos, burritos, bowls, or sandwiches, or just served alongside some Gallo Pinto or Cilantro Lime Rice You can make a big batch of it and eat it four different ways over the course of a week. We certainly have.

This is one seriously delicious chicken sandwich. Go all out and butter and toast some fresh local bread to make these. They’re worth it.

For Serving:
  • Ciabatta or other good, crusty bread (This is also great served over brown rice, for those who want to avoid gluten.)
  • 1/2 Red Onion thinly sliced
  • 6 slices Cheese whatever you like, we used mozzarella

  • Ciabatta or other good, crusty bread (This is also great served over brown rice, for those who want to avoid gluten.)
  • 1/2 Red Onion thinly sliced

Instructions
Spicy Shredded Chicken
  1. Remove the stems and seeds from the dried chilies and toast them in a pan over medium heat. Toast for a couple minutes until fragrant. Remove and add the chilies to a blender along with the water.
  2. Add your pumpkin seeds to the hot pan and toast until they puff up and start to turn brown. Remove from heat and add to a spice grinder or mortar and pestle along with the oregano and cumin, if using whole seeds. Grind to a fine powder.
  3. Add pumpkin seed mixture to blender along with garlic, salt, pepper, apple cider vinegar, and olive oil. Blend until smooth.
  4. Preheat oven to 325 degrees F. Add sliced onion and chicken to a pot, pour in the sauce and cook for 45 minutes. Or add everything to a slow-cooker and cook for 4-8 hours. Use two forks to shred chicken.
Coleslaw
  1. Add shredded cabbage and carrots to a mixing bowl along with mayo, lime juice, honey and salt. Mix to combine evenly.
For Serving:
  1. Butter and lightly toast your bread. Then, layer spicy chicken, cheese, red onion, and coleslaw and enjoy!
  2. Or to make it a bowl, top a serving of brown rice with chicken, then cheese, onion, and coleslaw.
