Tomato Mozzarella Bruschetta
This tomato mozzarella bruschetta is one of the most delicious things we have ever eaten! Don’t be fooled by its simplicity. It’s that simplicity that allows the incredible flavors of each ingredient to shine. The combination of flavors and textures creates a heavenly bite and a crowd pleasing appetizer.
For this dish the quality of ingredients is absolutely key. For ours we use a fresh, local whole-grain sourdough from one of our favorite bakeries. We also use this amazing local cheese called queso cremoso, a fresh and creamy cheese similar to the fior di latte we used to get in the US. This has quickly become our favorite local cheese here in Costa Rica. If you ever travel here I highly recommend trying it. Imported cheeses are prohibitively expensive in Costa Rica and a lot of the local varieties are underwhelming. But not queso cremoso. It’s both affordable and insanely delicious.
The quality of your tomato and herbs are also important. Fresh herbs are one of the best ways to enhance any dish. Just a small amount can add a ton of flavor. And this just won’t be the same with dried herbs. (I sometime use this same garlic herb butter to top steak. It’s amazing.) Tomato quality varies quite a bit and many of the tomatoes found in supermarkets are bland and flavorless. We recommend finding a good local source that allows their tomatoes to ripen on the vine.
Once you’ve found some high quality ingredients, this dish comes together really fast. It takes less than ten minutes. And yet it creates one of the most delicious appetizers. Seriously, you’ve got to try this.
