Grilled cheese and tomato soup has long been one of my favorite meals. It is the essence of comfort food for me. And, yes, usually I’ve eaten canned or packaged soup. But homemade tomato soup is so easy and delicious. So I decided to make my own. Canned soup can’t touch this. It’s the real deal and it only takes 15 minutes to make!
I love the flavor of roasted garlic so I just had to add some to my tomato soup recipe. And since we were roasting, I thought, why not roast some red pepper and onion too? The roasted veggies create a lot of flavor really quickly. It only takes about 5 minutes with a good broiler. But the caramelization on the onion and garlic and the blistering of the pepper add serious depth of flavor. You’ll notice that our pictures show two small red peppers being roasted (they’re a local variety of mild pepper called chile dulce) but they are about the equivalent of one red bell pepper, which are not available here.
Fresh vs. Canned Tomatoes
After some research and deliberation, I did decide to use canned whole tomatoes as the base. Since the tomatoes are already cooked and peeled, it significantly cuts down on time and effort on our end. Plus, Italian tomatoes and tomato products have really great flavor and often come in pure form, with no salt or preservatives added. They also provide consistent quality and availability. Make sure you read the label on any packaged products you buy though. That way you know exactly what you are putting into your body.
This tomato soup recipe is so simple and easy. It’s vegan and gluten-free and it can be prepared in just a little more time than a pre-made soup. We highly recommend giving it a try. It’s made with all plant-based whole-foods so it is certainly more nutritious than any canned variety. And it was perfect for dipping some delicious grilled cheese sandwiches into.
