Veggie Burgers w/ Garlic Sweet Potato Fries

Burgers and fries have long been one of our favorite meals. But traditional burgers and fries are really unhealthy and not something we want to eat all the time. As part of our effort to eat healthier, including eating less meat, we have been creating plant-based versions of some of our favorite dishes. These veggie burgers and garlic sweet potato fries are completely vegan but still satisfy our love of burgers.

We’ve tried quite a few store bought veggie patties over the years but we’ve never been really impressed with them. We always felt that veggie burgers could be more flavorful and nutritious. So, we decided it was time to make our own. This spice blend is a little more complex than what I would use for normal burger patties but it really elevates the dish. The rich, savory, earthy flavors of turmeric, garlic, paprika, thyme, and coriander create a mouthwatering combination and bring numerous health benefits.

The bulk of the patties are a mix of texturized soy, black beans, mashed sweet potato, and green onion. This provides a great variety of flavors and textures and forms a perfect consistency for burger patties. These are guilt-free vegan-friendly burgers that won’t clog your arteries.

Garlic Sweet Potato Fries

Why sweet potatoes? We stopped eating regular potatoes awhile ago. Now, any dish that we would have used regular potatoes for, we use sweet potatoes instead. And there’s a good reason why. Sweet potatoes are an excellent source of vitamin A and have more vitamin C, fewer calories, more fiber, and less carbs than regular potatoes. In fact, one baked sweet potato provides about four times the daily requirement of vitamin A. They do have slightly more sugar than regular potatoes but still less carbs overall. Plus, we also like the taste more.

These garlic sweet potato fries are baked instead of fried to reduce fat content. Because nothing is healthy after it’s been deep fried. But these baked fries are still really delicious. Toss them in some freshly minced garlic, dill, salt and pepper and they pack a serious flavor punch and make a perfect pair with our veggie burgers.

Instructions
  1. Preheat oven to 425 degrees. Peel all of the sweet potatoes. Cut one into large chunks and boil it until soft. Cut the others into fries.
  2. Mash the boiled sweet potato. In a large mixing bowl add black beans and mash.
  3. Add soy, mashed sweet potato, green onion, garlic, paprika, turmeric, thyme, coriander, salt and pepper to mixing bowl and mix thoroughly.
  4. Spray a large baking sheet with oil and space sweet potato evenly. Bake until golden brown and cooked through, about 10 minutes.
  5. While the fries are cooking, form patties out of the mixture and cook in a pan over medium-high heat for about 5 minutes, flipping halfway through.
  6. When fries are done, transfer them to a large bowl and add minced garlic, dill, salt and pepper and toss.
  7. Serve patties on burger buns with whatever toppings and condiments you prefer with a side of garlic sweet potato fries. We like to add cheese, lettuce, tomato and onion.
