Garlic Sweet Potato Fries
Instructions
  1. Preheat oven to 425 degrees. Peel all of the sweet potatoes. Cut one into large chunks and boil it until soft. Cut the others into fries.
  2. Mash the boiled sweet potato. In a large mixing bowl add black beans and mash.
  3. Add soy, mashed sweet potato, green onion, garlic, paprika, turmeric, thyme, coriander, salt and pepper to mixing bowl and mix thoroughly.
  4. Spray a large baking sheet with oil and space sweet potato evenly. Bake until golden brown and cooked through, about 10 minutes.
  5. While the fries are cooking, form patties out of the mixture and cook in a pan over medium-high heat for about 5 minutes, flipping halfway through.
  6. When fries are done, transfer them to a large bowl and add minced garlic, dill, salt and pepper and toss.
  7. Serve patties on burger buns with whatever toppings and condiments you prefer with a side of garlic sweet potato fries. We like to add cheese, lettuce, tomato and onion.
