We love quick, easy, healthy dinners and this is one of our favorites! This zucchini lasagna takes only a few minutes to throw together and a half-hour to cook and it makes enough for the two of us to have two filling meals. Oh, and it’s also crazy delicious, affordable, and vegetarian! There’s a reason this has become one of our favorite dinners. It’s so good, we usually eat it for dinner and then again for lunch the next day.

We’ve been trying to eat less meat and carbs lately, for a number of reasons. It saves money, it’s healthier, more ethical, and more environmentally friendly to eat more vegetables and less meat. This dish fits perfectly into our new healthier diet. Traditional lasagna is delicious, but those tasty layers of pasta, meat, and cheese are definitely not healthy and best to only eat on special occasions. But our zucchini version is healthy and guilt-free.

This dish is so quick and easy. It takes me less than 10 minutes to make and only 30 to cook. Great for busy nights when we don’t have a lot of time to cook. We even make our own marinara sauce and it’s still really quick. We like to avoid store-bought sauces because they are often loaded with sugar, salt, and preservatives that we really don’t need. This sauce is easy to make and packs a flavor punch. It’s great for anything. Just be careful with the red pepper flakes. If you don’t like spice, you may want to just leave those out.

This dish has minimum layering to keep it quick and simple. Start with a layer of zucchini, top it with some of that delicious homemade marinara sauce, layer your cheese, then top it with another layer of zucchini and sauce. Cover with foil and bake. That’s it. Enjoy!

Instructions
  1. Preheat oven to 400 degrees F. Wash zucchini and trim the ends. Slice thinly lengthwise to create long flat pieces.
  2. In a bowl, mix together tomato sauce, olive oil, garlic, basil, oregano, fennel, red pepper flakes, salt and pepper.
  3. In a 9x13 baking dish, place half of the zucchini in a layer to cover the bottom. Spoon some of the sauce evenly over the layer of zucchini.
  4. Spread cheese evenly over the zucchini.
  5. Layer remaining zucchini over the cheese and top with the rest of the sauce.
  6. Cover with foil and bake for 30 minutes, or until zucchini is soft. Enjoy!
